How to tell if seeds are viable?

Hello,

I recently tried to grow some torch ginger (Etlingera elatior) from seed. When I opened the fruits, some of the seeds were white, and seeds that were older were black. I wasn't sure which to use so I tried some of both. That was a few weeks ago and none have sprouted yet. All I did was remove them from the fruits and then plant them in moist soil and water to keep the soil moist. I also tried putting some of each color on wet paper towels just to see if they would germinate and I had no luck. Any advice on getting these seeds to sprout?
