Culinary ginger in a pot

Last fall, I planted a supermarket rhizome in a pot to see whether I could grow my own supply. The rhizome rooted and produced a single leafstalk. All winter, the leaf hung on in spite of our cool house and low light. So what happened when the days started to lengthen? Why it dropped that single leafstalk, and is now sitting in a sunny window with nary a green leaf bud in sight! The rhizome seems perfectly healthy. Can someone explain this behavior to me? Any hints for producing a ginger crop in a pot?

    It's clock got all messed up by being indoors. New shoots take a long time on all the deciduous gingers, mine are just now starting to come up. Can you set the pot outside? Leave it out until cold weather starts, it will go dormant for the winter.
