You can, but I find that A. zerumbet tends to grow slower than H. coronarium and since its main attraction is its leaves, it may be better to just cut off the spent flowers. But if you have a really thick, healthy plant, to encourage fresh growth, you should cut off the whole stock.

Mike, unless you want to collect seeds, cut the suckers to a few inches above the base. My flowers profusely and historically when I have kept the stalks w/spent flowers, they were never as attractive or healthy.

Unlike other gingers where you need to cut the spent bloom stalk, this one will continue to survive, but I have found the stand fills out quicker and produces more new stalks faster if those are removed.
