How do I plant this ginger?

Hi there, I am new to gingers, Pleased to meet y'all. Someone gave me this ginger, and I need to know how to plant it. Should I just lay it on soil and smush it in a bit or cover the flower part completly? Also does anyone know what kind it is so I can look up the particulars on it? One more....What would be a good ginger for full sun here in Fl, some days it's hotter than hades! I really like the shell ginger and have a large yard so I have plenty of room but NO shade. I just came home from an outdoor market with a pound of Edible Ginger. Many green sprouts. I'm in Fl Zone 8A and I am in need of planting instructions. I am hoping I can cut off the portions that are greening up and plant only that section of the rhizome . Also, is this a perennial for my zone or will I need to bring it in over winter?
