Ginger shoots

The fresh young shoots of the ginger plant (sliced into matchstick-sized pieces) are used as a seasoning for Chinese cooking. In Chinese they are called ginger "fingers." They are especially delicious cooked with onions and shredded meat. Does anyone have any tips for cultivating ginger shoots? I know that they sprout from ordinary ginger roots, but I don't know when or how to harvest them.
