ginger roots eatable?

If they are eatable, when can the roots be harvested? Do they have to be dried or used fresh?

Hi Helga,
Any ginger is edible, none are toxic. Some people eat the blooms on some while others eat the inflorescence as well as rhizomes. You harvest during the plants growing season, since that is when they are plump.
