Harvesting?

Hi:

I'm new to ginger. Planted some pieces of edible ginger which I picked up at the grocery store a while back which are now growing nicely.

Question: When do I know when it's time to harvest (eat) the 'root'? Also, when I pluck it, is the plant history, or can I harvest some of the 'root' but keep the plant going?

I think you should be able to harvest from the part you planted and leave the new growth alone. When you slice some off treat the cut end with root tone or sulfur and let it heal over a bit before replanting. You may loose a lot of your foliage thought.
