Help with Ginger Plants

I recently moved into a house that has so much landscaping and I don't know what do do with it all. I found out today by going to the nursery with a leaf that I can some ginger plants growing and they are HUGE, and most are falling over. There are about 10 stalks in an area about 4 ft by 4 ft. I would like to cut them to the ground hoping they will not get as big next time. Can I do this now? Should I dig some up so there isn't as many also?? They have a red flower but it doesn't look as stunning as many of the ginger pictures I see. Maybe it just needs fertilizer.
