Ginger - Advice needed

I want to get a few gingers but I do not know what is best suited for my area. And, are some hardier than others?

I live in North Alabama and it does freeze so I guess I would dig up and take in for winter? If you do dig up do you store in pots? Or, dry it out?

Along with hedychiums, some cucurmas also do well for me and I am in zone 7. Just provide good drainage.
