Ginger for flavoring

I like to make my own ginger ale & have started some plants from the ginger I bought for the ginger ale. Obviously it has a strong scent & flavor. Someone gave me several pots of ginger that do not have any scent. They have died back for the winter so I don't know what they will look like.
Question: Do all gingers have the scent/flavor that is used in cooking.?

No ginger is toxic so it's all a matter of taste. Experiment with rhizomes, foliage, blooms even inflorescence. Alpinia galanga is used quite often in Thai cooking as is Boesenbergia rotunad, Curcuma longa/domestica is turmeric and the list goes on. We've seen a large increase in interest here at the nursery in using gingers for cooking as well as medicinally. I use it quite a bit, many different ones. Liz@gingerlandtropicals.com |
