Too much water or not enough???

Hi everyone,
Need a bit of help here. I have this flash tropical garden which I love dearly but I am struggling to determine if my gingers and a few of my cordylines and others except the heliconias are browning at the sides and tips of the leaves, some look dark mainly on the cordylines. I cut down a few of the red tulip ginger stems and they were brown in the center so I am thinking they are rotting. But my red tower gingers look all droopy and the flowers are dying and discolouring. It's a newly established garden and it's the second Summer for the plants. I have done the stick the finger down in the dirt to check for moisture but they seem fine but maybe a bit dry if anything. Could it be over fertilising or under? They look burnt but well I'm stumped. Only organic fertilizer a year ago. Help please I will attach some pics!!!!
