Pruning and Blooming

I have a beautiful Alpinia Zerumbet (shell ginger) and I need to know a couple of things about taking care of it.

First, I've read that they do not bloom every year. How often do they bloom? Is it on a cycle or is it at the mercy of the weather on any given year?

Second, I have read that once a stalk has bloomed it will not bloom again and can be cut out of the plant. I also read that it only blooms on old growth. These seem to be contradictory statements -- can someone clarify? And how old is "old" growth?

The other issue is that the plants are huge -- easily over 12 feet tall. How tall do they get? Is there a way to cut/prune/trim them back and still have them bloom?
