Just about your whole list...you would be better off asking which doesn't have a hard skin...most are all winter squash...and store well

wasn't sure about Tahitian or Sucrine...had to look them up but yes, they are all winter squash....start looking under the summer squash to find soft skin edible squash..

All squash have varying degrees of hard skin when mature (ripe) Summer squash are eaten as babies (immature) so the skins don't come into play. Many of the winter squash are also eaten in thier immature stage as summer squash. But regardless the squash from crooknecks to pumpkins have a hard skin when mature.

Thank you for your responses. I reallize that all winter squash have hard skin. I also know that lots of those hard skins get soft and edible after cooking. Others stay hard after cooking and cannot be eaten. Those are the ones I was asking about. Thanks. Paul.

Regardless of whether the squashes have hard skins or not. You can bake them in the oven and the skin will be soft enough to eat.

For soft/thin skins, I'd try the acorn and delicata varieties. Sometimes I find it hard to scrape the meat off the skin without the skin coming along for the ride.
