Tiny Zucchini vegi not growing

The plant as well as the little zucchini vegi look of a healthy green. I see no signs of disease. I read that once Zucchini have been pollinated, they grow rather fast (supposedly 8 days or so til they are ready to be picked). I know for sure they are pollinated because I pluck the male flower and pollinate the female so they can continue to grow their zuke baby.

The zuke babies are about a week to two weeks old and has remained the same size, which is about 3 inches long. They have a healthy green look though, and I see no signs of any sort of foul play by disease or pests.

I water deeply about 2-3 times a week, sometimes using liquid fertilizer every other week or so to help the plant.

I live in Texas, and the daytime temps are about 95 degrees Fahrenheit at the high and mid 60's at the low.
