? cure trombetta squash

Hi, I am growing this squash for the first time ever this year. I have enjoyed them young, but had one that was especially big that I left to ripen. It has turned a pale yellow. Yesterday the stem broke and I brought it in. Should I let it cure or go ahead and roast it?

Your choice. Like all butternuts the flavor is better when cured a couple of weeks.
