Harvested acorn squash too soon?!

6-7 of these nice big acorns have been dark green with just a bit of dark yellow on the bottom for several weeks--looked same as ones in the stores, so this morning I cut them off the vines...But as I cut one open to prepare for dinner, the flesh is not the deep yellow-orange I think it should be, kinda pale, nor are the seeds real hard. Have I just wasted all of those squash, or is can I prepare them into edibility anyway?
