harvested too early?

I hope we didn't ruin our gourds by harvesting them too early.We wanted to pick them before the first freeze,& it has been unseasonably cool recently.We were afraid they would freeze & bust. My husband suggested we cut the large gourds we grew this year in hopes that the plants could spend all their energy on the remaining smaller ones that are just a few inches long. Is there anything I can do at this point to keep the ones we cut from rotting, or are they doomed?

I know some people pick them green if they are going to carve designs on them.

We haven't been very succesful with growing them in the past. I was so looking forward to decorating them.I hope to sell some on ebay soon.I am new to the forum,& I would appreciate some feedback from other members. Thanks gourdeana
