September in the pumpkin patch - questions

My Big Max pumpkins are looking worse for wear - leaves on the vines are starting to die back despite regular watering and feeding. Must be the end of the growth cycle. I have a couple of question about my 2 pumpkins, however.

1. They have not grown any in size in the last 2 weeks or so. They are turning orange, but not sure how orange they will get - how do I know when to pick them?

2. Someone told me that when the vines start to die back, I should just stop watering them and that will help the pumpkins ripen. Is that right? Should I stop watering the plants or at least cut back on the watering?

3. Once I pick the pumpkins, do I need to let them sit for 7 - 10 days to harden, like I do with my New England Pie Pumpkins.

The Big Max were a lot of fun to grow - watching them go from the blossom to the size of a softball in 2 days, then to a 52 pound monster 3 weeks after pollination was amazing!
