My lemon grass is flowering. Please, how do I know when the seeds are ready to harvest?

RE: Lemon Grass

Wait until the stem holding each inflorescence is tan in color, just behind the flower. Harvest the whole flower and dry it. Then crumble the dried flower, and pick out the seeds.
