If you want tall and with that bronzey winter interest, look at the various Miscanthus sinensis cultivars. True pampas grass (Cortaderia species) may not do well in your climate and is considered evergreen and so does not change in color with fall and winter, although it will produce tall and longlasting plumes that will carry through the winter. It is also the OG genus known for having extremely sharp edges - most others are far more 'touchable' and people-friendly.

At your library, look for The Color Encyclopedia of Ornamental Grasses, by Rick Darke or The Encyclopedia of Ornamental Grasses by John Greenlee. Both are exceptional OG references with detailed growing info and lots of good color photos.
