Cutback grasses now different than before...?

I have a few types of ornamental grasses (don't know the names - please forgive) that I gave a haircut to as I read about in this forum. They all has soft, narrow, blade-like stems. Now they are growing back with wheat-like tufts on the ends. I don't care for it...but am not about to dig them up and replace them. Who knows why they all (three different grasses) kicked into this new form/shape/whatever?? Did I stress them into thinking they had to reproduce and now they are going to seed?
