Help with Liriope (Monkey Grass)

We moved into a house that had liriope planted as a border, but it's out of control. I struggled with it last summer & it was worse this summer. It is the solid green kind with the purple flower, & the grass had gotten about 1 1/2 feet long. Out of frustration, I cut it down to about an inch from the ground. It goes about a foot into my garden & I've started digging it back to the edge of the border. I plan on also digging some space between each clump of plants as well. Then I'm hoping they'll look more well groomed next summer. Any general advice on this plant? I cut it back before the last winter & it came back with a vengeance this year, so I'm not worried that I've killed it. Should I cover it with mulch when I'm through digging out the over grown mess?

If it's like mine mulch won't do much. It thrives without it and mulch doesn't restrict it's growth. I just have to dig mine out every few years. The best way to do it is to find someone who wants some and let them do the digging!
