how to prepare newly planted grass for winter

I just planted a bunch of zebra grass (structus) 4inch pots some in full sun and some in partial shade to see how they do. The grass is abour 1 foot tall and green. DO i wait till after a frost and cut the plant all off down to the ground and cover with leaves/mulch. Or do i make a TP plastic protector over the entire plants to snow never touches them. Or do i just let the snow land and cover the grass? i am in central mass, and it gets to about 40ish at night and i imagine it'll stay on avergae in the 60's 70' for the next few weeks. should i apply a slow release fertilizer in teh fall, or wait till spring.
