Fall cutting of ornamental grasses

I understand that keeping ornamental grasses up for winter "provides winter interest". I live in th high country of Colorado that they are pretty much smashed down immediately with snow, so does not provide "winter interest" for very long. Once spring arrives I have to cut down new growth even before the snow all melts. I want to know if it is OK to cut down in fall. Does this affect the plant health at all? This is my question. Thank you!
