ground cover dilemma

I have 2.5acres I intend to clear when we build as it's currently brush. I will be planting trees, etc .. in the back of the lot. However, what can be used to prevent errosion and the look of desolation while the trees grow? I do not want a 2.5acre lawn. Are annual groundcovers available? I thought above clover, but it might escape into the lawn area.

Why annual? There are many deciduous ground covers that you won't have to plant year after year. Evergreen ones, too.

I've used a mix called "Fleur de Lawn"

Low maintenance. In fact there are places I've not mowed it at all without a wilderness showing up.
