will my pepper plants be okay?

I'd say they're about 6-8 weeks old, as a guess. They have buds on them, no blossoms though.

I'm wondering if I transplant them now will they be okay?

I'm going to either plant them in containers or in the ground not sure which.

They look healthy.

With the exception of like two days this week, the temperatures should remain above 50 degrees.

Is that going to create problems for my peppers?

    Plant them soon. As a test, remove the buds from half of the plants and see which ones do better. I once planted a tomato with one tomato on the plant. That was the only one it ever got. Removing the buds will allow the roots to grow and make a stronger plant.
