Beds around trees

I inherited these great oak trees. however the beds underneath have 1 on every plant underneath. I want to make the beds look more uniform with something that flowers. I am South of Houston in the 30 mins from the coast.

Can't see your yard Izy. Sounds pretty. I tried pasting the address and the link didn't work either.
We lived in Texas City for 7 yrs. and never had problems growing anything under the trees. The only problem I had was with the squirrels digging up my bulbs. Good luck.
