Orange recipes

It's the time of year here where I've ended up with a box of oranges. I'm not big on orange jams and such, is there anything else I can do with them? Thanks for any ideas. Lori

Lori, I'm in the same boat. It's that time of year again...

I froze juice, froze some of the peal/zest for baking later, made marmalade, and different glazes for meat, etc

I'm looking for new ideas too

I decided to make some marmalade instead of letting them go to waste. I can always use it for glazes, I'm thinking. I had 1 1/2 boxes. The 1/2 box was in better shape but the full box had one with mold on it already. If I discarded any with patches of mold could I still use the others if washed thoroughly? I wondered if the spores could survive the processing, since you do use the peel of the orange. Thanks, Lori

I'm not a big fan of marmalade, but I luv luv luv orange jelly. I just squeeze the fresh oranges, then add sugar and pectin.

As for the mold - definitely toss any orange with any mold on it. I would not use any orange that was next to the moldy orange for marmalade, but the ones in the other side of the box should be fine. Just wash thoroughly since, like you say, you use the peel in the marmalade.

I also love cranberry orange relish. I grind fresh oranges with cranberries - 4 oranges to 1 bag of cranberries. Add sugar to taste. This freezes really well, and in fact, I find it actually tastes better after being frozen.
