Uses for lettuce

Hi All,

I also posted this in the Harvest forum, but thought some folks here might have some good ideas. I have an ABUNDANCE of leaf lettuce (black seeded simpson, redina, arugula, etc.) and just can't seem to use it all up. Any ideas except for salads? Thanks!

Lettuce soup is tasty and you can freeze it. Arugula isn't a lettuce and would probably not go well in lettuce soup but if you have a lot you could always experiment. You can also braise lettuce and cook it with peas.

Use in place of tortillas to make sandwich wraps.
Chop and toss into soups, like other greens.
Share with friend/neighbors.
Donate to food pantry or homeless shelter.

What a wonderful problem to have!
