| I recently made the Ball recipe for ginger pear preserves. The recipe says to use 5 1/2 cups of finely chopped peeled cored pears - it says that's about 8 medium pears. The pears I used were what I would consider small to medium but it took less than 8 of them chopped in a small dice to make 5 1/2 cups. The limes were from our tree and much larger than grocery store ones. The three limes produced about a cup of juice. It only yielded a bit under 2.5 pints but the recipe says it should yield about 3.5 pints. Did it mean to chop them in a food processor rather than hand chop them? Perhaps that would have packed more densely for measuring but I thought I had the measuring cup pretty packed. I like the texture with the very small dice I used. The flavor was really good so I made another double batch and the quantity came out about the same - 4.5 pints plus about a half cup. I wish more recipes gave weight rather than volume for ingredients. Even recipes that give the ingredients by weight often say they yield more than they do. Is there something I'm doing wrong that reduces the yield? |

| I have often had a recipe yield more or less than the stipulated yield provided. I finally just quit worrying about it. I'm not sure how those yields are arrived at but I'm assuming there's such variation in chopping methods, water content and sizes of items that the yields are seldom much more than ballpark figures. | I always give myself an extra jar or two per recipe. I've never had the recipe to be exact enough to swear by. I also don't worry about it. |

| Like carol said, it is common and nothing to worry about...unless you end up with LOTS more or less. :) The recipe gives general guidelines only as there is simply no way to anticipate for the many different methods and interpretations folks will make with the same recipe. "Chopped" means lots of different things to different people. Dave |

| I always try to make notes on any recipe that I use, especially the one I like versus don't like. I got in that habit while my sons were growing up. Seemed like there was always someone that didn't like it. When all 3 did, it was a WINNER. |

| Some few recipes do use weights and for a time there was a move to transpose recipes to weight measures but unfortunately the resources are lacking to continue. Ball/Bernardin could do so but why mess with a good thing? Their profits are through the roof as is. Carol |
