Unexpected Bounty

Today something jogged my memory and I remembered that I had planted a sprouted Sweet Potato in one of my big pots. It had made a huge, beautiful plant that graced the garden most of the summer. I went out to see if there might be a new tuber or two to harvest. HAH! more like 30 of various sizes crowding the huge pot they were in.

Some have what appears to be a spot or two of decay. I thought I would peel these and cut away the bad to make use of the tuber. My question is: do I have to cook the sweet potato before freezing? or can I just chunk them up and freeze those uncooked?

Also, they are washed and drying now, but do I have to wait for them to cure a bit before using them?
