Canned chicken--lip smackin' good!

Oh my! I impressed myself today! I pressure canned chicken for the very first time (used the "recipe" in So Easy to Preserve). I also deboned the chicken and did a raw pack. I canned in mostly half pints, but have one pint and one 4-oz jar for the itty bit left over. I couldn't wait to try it because it smelled so good in the kitchen, so I popped the top on the the little one while it was still warm. To all of you who have mentioned in other posts how good home canned chicken is...YOU ARE RIGHT! This stuff is good, moist, tender...and did I say good? Nothing in the jar but the chicken and a little bit of salt. Now I have several jars of "instant" shelf-stable chicken to make other dishes. I WILL be making this again!

Has anyone canned squirrel or dove? Our homestead is overrun with both--and it would be a free source of food.
