What to do with kumquats?

I have a large harvest this year. I don't know what to do with them. They are the sour ones. I made a recipe from the Ball book last year, but it's too sweet. Anyone have any suggestions for canning them?

    How about Kumquat marmalade. Delicious!

I know there are some previous discussions here on using them that the search will pull up for you. Meanwhile Google offers lots of recipes for them for fresh eating.

Never cared for them personally so can't offer you any tested recipes but wife and the kids like to dehydrate them for snacks if that appeals to you.

I found a recipe for marmalade at allrecipes.com! Thanks, I'll do that - it will take care of some of the kumquats and lemons that I have in abundance.

Dave, I didn't know you could dehydrate them. I dehydrate fruit regularly - did pears yesterday, so I'll try them dehydrated. They might be good with cinnamon on them.
