I dry fruits and they stay good for a long time just in a jar. However, I got a Foodsaver, and have started putting dried fruit in bags, but not freezing them. I do the same with dry beans, mainly to keep bugs out of them. I don't see why they wouldn't taste good if you freeze them, but that seems to be an unnecessary step. I've kept dried fruit for over a year, some for 2 years now, and it's fine. I cook it into a compote when I want to use it.

I agree with eahamel that properly dried fruits can be stored for months and months in just a jar if kept dry and out of the heat. The only issue is mold developing because they weren't dried fully. Or yes you can vacuum seal in jars or pouches.

Freezing gives them even longer storage life and they taste just great when thawed.

The clue to long storage is in the drying process used more so than the storage method.

PS: oven drying is one thing but the so-called oven canning should be avoided.

Dave is right, you do have to be sure they're completely dried, or they will get moldy. I don't use large jars for just that reason - if one fruit or batch is off, it won't ruin everything. I've had it happen only once or twice that I can remember, and I'm on my 3rd dehydrator, so it's been maybe 10 years or longer that I've been using them.
