anaheim peppers

Wow I just opened a jar of pickled peppers and are they ever hot. Its my first canning of peppers. December I got a whole case of anaheim peppers and wasnt sure about freezing so I pickled and made hot pepper jelly. the jelly wasnt that hot but these pepper rings sure are . Do they get hotter the more they sit? I thought they would be more like banana peppers.
well my kids will love them, probably eat em like candy.

Did you remove the seeds and membrane? That's where a lot of the heat is.

Yes I did most of the seeds and all the membrane. I guess I will relabel them as medium not mild. still iam

Scoville rating for Anaheims is about 4x hotter than Banana peppers. :)

They will lose some of their heat as they age but by then they may have lost texture as well, so if the kids love them "as is" that's great.

Peppers do differ season-to-season depending upon growing conditions, so the next case you buy may be milder or even hotter. All you can do is taste and perhaps mix pepper varieties if you want varying degrees of heat in the jar.

A pepper jelly will never be as hot because the sugar "tones down" a lot of the hotness.

This case was actually a blessing along with 12 cases of blackberries and 2 cases of grapes. I was jammin and freezing as fast I could move.
on the pepper jelly i would like it a little hotter next time so I may use jalapenos. I just used up those anaheim any way I could think of.
