no salt canned tomatoes

Hi,

In the past, I've done a little canning, mostly salsa, and I've also frozen some of the tomatoes too. This year I am growing many more tomatoes (we moved from a 1/4 acre property to an 8 acre property!). Anyway, for health reasons I am looking to preserve the toms without salt. I recently got a food dehydrator, so I guess this is an option now too. To save room in the freezer, I was hoping to can some toms without salt. My mom says that they will "sour" but she has never tried it. Does anyone can thier toms without salt (diced, sauce, crushed, any form of toms), and if you do, do they turn out OK?

RE: no salt canned tomatoes

With apologies to your Mother, salt in canning tomatoes is optional only, not required, and AFAIK it never has been required. The approved recipes all say "if desired". We can all our tomatoes without added salt and have for years. That way they can be used in many different recipes.

Added acid in the form of bottled lemon juice or citric acid IS required.
