Adding Food Color to Rhubarb Jam

I have several rhubarb plants in the garden that are starting to produce. I will probably have a lot again this year. I was wondering, if I use to to make XXX rhubarb jam (there are several recipes available), will it harm anything to add some extra red coloring to the recipe? My rhubarb is Victoria, very tasty and very productive, but not really red-- mostly greenish red. I wasn't sure if adding a bit of color to the mix would cause problems.

I don't see any problem with it. The amount would be miniscule, especially if you use a gel.

Actually, there are a few proven recipes for jalapeno jelly that call for added food color to make the finished product red or green. Very pretty as a holiday food gift.

However, you might want to do a tiny test batch. If you add red to green you may end up with something brownish.

IME adding a few drops of red food coloring to rhubarb jam is pretty much a standard practice. Same goes for rhubarb pies and it doesn't take much. Most of the common commercial jams and jellies also use food coloring.

What about using some other red fruit to add color to it? I bought Bonne Maman brand preserves when we lived in the Netherlands. Their rhubarb jam was the same light brown color as the fig preserves.
