| I had bumper crops last year, and much more limited time this year, so I was considering letting some of my frozen stuff stay in the freezer for next winter instead of using it up now. Is that a really bad idea? Or a passable idea?
The veggies/fruit in question are: tomatoes, zucchini, broccoli, scapes, pesto, blackberries, cranberries, blueberries, string beans, peas, kale. Thanks, in advance, for your advice. |

| If you used proper techniques and good quality bags or containers, they should all be good for about 2 years, IMHO. After that, it gets dicey, not a food safety issue, just a quality issue. |

| I agree, a quality issue, not safety, and I think your beans, peas, kale would be the first of those things you mention to show diminished quality - or at least that's been my experience with my upright, manual defrost freezer. The berries? I often keep them two years with no noticeable difference in them at all, not in taste or appearance. |

| Excellent -- that's great news. So, we'll just eat the fresh stuff that's coming in now, and if I don't have much time to freeze this summer, we'll still be set for the winter. I used those freezer bags that you use the sucky thing with that takes all the air out. Makes a very tight seal with no air. |

| You should keep them frozen and just remove a portion of each type once a year to photograph. Have a series of pictures of the food, both frozen then cooked, after 1 years time, 2 years, 3, 4, 5.... |
