I DID IT, GUYS! I PRESSURE CANNED!

I successfully pressure canned 2 pints of spinach.

Now, I'm sure you're wondering why I would go through all that work for only 2 pints of spinach...but i didn't want to waste all my lovely spinach in case it was a total and complete failure.

I'm so happy! I don't know what I was so scared of before! I've just shot my confidence through the roof!

Jessica, this may only be the start of an obsession to can ;) My grandmother and DH's beloved grandma both used the pressure cooker to make quick meals out of meats and veggies that may have taken hours and hours in the oven or on the stove. I wasn't especially scared of it but definitely respectful.

I'm happy for you that things turned out, welcome to the world of canning!!
