| when i was putting away some strawberries this a.m. I found a jar of sweet potatoes I dehydrated last year with a loose lid. would they be useable or should I toss them? would they have 'bad' stuff in them now that would make us sick? Donna |

| How do they look? Do you see any unusual discoloration, mold, bugs, etc? If you followed directions for drying and storing then the potatoes should be ok to eat. |

| I think they should be fine since they were dehydrated and not canned. Dehydrated foods rely on the lack of moisture to prevent against spoilage, not an airtight seal, like canned foods. So as long as they were dehydrated correctly a loose lid, in and of itself, is of no consequence. |
