I want to try to make some pickled green tomatoes but I don't have time right now. My question is can you freeze the green tomatoes and use them later?

You can but they will result in softer/mushier pickles. If you want crispy pickled greens then freezing won't work.

Freezing anything breaks down the cell membranes in the food so when it thaws it will always be softer texture.
