Strawberry Lemonade: Shirley's vs Ball Complete?

Posted by mom2wildboys RI zone6 (My Page) on

Has anyone made both these recipes? I'm making the Ball Complete version b/c it seemed to make more sense to not include the additional water at the time of canning. Looking at Shirley's version, I see it has a much higher proportion of strawberries to lemon juice, so I expect it would likely have more strawberry flavor. I've read a lot of reports raving about Shirley's version, but what about the BC recipe? Any input?

I just finshed my batch of the Ball Complete strawberry lemonade concentrate. Approximate yield is listed as 7 pints, but I got barely 5! Guess I should've been more generous with my strawberry measurement or something!

I just made this.. and I think the Ball version has some issues with "6 cups of hulled strawberries".. because there is a HUGE variation in 6 cups depending on the size of the berry.

I filled my 8 cup measure to the top because my berries were GIANT.. I figured, it couldnt' hurt. And I got 6 and 1/2 pints

My berries were pretty tart but I found this very sweet.. I think I'll make it with less sugar next time. Given the ingredients I don't think that will be a problem.

Haven't made the Ball one, only Shirley's but a lot of people who make this end up treating it more like a "concentrate", using it with club soda, etc. because they do tend to the sweet side. You can reduce the sugar if you make it again.

For measuring try the water displacement method. It's more accurate for anything chunky. So let's say you want 2 cups of strawberries. You take a quart measure and pour in 2 cups of water. Then you add berries until the level reaches the 4-cup mark. Result: 2 cups of water + 2 cups of berries = 1 quart.

well now, isn't that brilliant! Why didn't I think of that!?

Hey, I can't take credit for that, LOL. It's common in chemistry, though I first learned about it in an old Farm Journal cookbook on canning and freezing.

Carol,
Thanks for that tip. I put into my cookbook in the event old age prevents me from remembering it. Now where did I put it??
Just kidding!

Okay, so I did make some of each version. The Ball Complete version is definitely both sweeter and more lemony; Shirley's version is indeed more strawberry-ey. :-D They are BOTH too sweet for *me* to drink diluted 50/50 over ice, though I'm sure my kids will love them when they are given a chance to taste them. But! But!!! Oh. My. Goodness. Let's talk about another use for these concentrates: Frozen adult beverages!!! Delicious.

'Nuff said. Back to your regularly scheduled programming, so I can finish my daiquiri!

Its always a good idea to TASTE any foods you plan to can. Many people are never thinking of what something tastes like, until they open a jar later on. Sometimes your impressed, and sometimes your really upset. I like adding an acid blend to my jams and jellies. Its a mix of citric, malic, and tarteric acids, which are found in most fruits. Its available from wine making supply stores. I use no sugar in mine, but do use a small amount of honey and the Pomona pectin, which sets up without any need for sugar of any kind.

I made the Ball version and it is pretty good. I too also only got 5 pints from the mix but I didn't use the water displacement technique when measuring the straw berries. It is lemony with a good hint of strawberry. It is also too strong for me when mixing 50/50 so I think a little less more water will be better but that is fine by me. I like the thought of adult beverages with it as well.
