| Got an idea from someone on this forum to do rhubarb butter (just like apple butter - cook rhubarb down with a bit of water and add sugar to taste). Would this be safe to waterbath? I plan on using 1/2 sugar and 1/2 sugar substitute.
I know I could freeze it but don't really have room in my freezer. |

| Yes it is safe to waterbath. For purposes of home canning rhubarb is treated as an acidic fruit. Dave |

| There are also several old threads about rhubarb sauce and rhubarb-strawberry variations, among others. Applesauce with a twist. You might find that idea interesting also. Carol |
