I am sorry for all the questions today. But, y'all are so helpful!

I have this recipe for salsa

1 can rotel
1 can diced tomatoes
4 tsp canned jalepeno or 1 fresh
1/4 onion diced
1/2 tsp garlic salt
1/2 tsp cumin
1/8 tsp sugar
fresh cilantro to taste. I use lots because I like the flavor of it.

Combine in a blender, blend don't puree.

Ok, this recipe is fabulous!! What I want to know is if I wanted to freeze this can I? Just as it is? Does it have to be cooked? Also what if I used fresh tomatoes in place of the can of diced?

Can you freeze in canning jars? Or would it just be better to put in freezer bags?

I want to have it on hand not have to make it every time we want to eat some.

There are no safety issues when it comes to freezing except for shelf-life. You can make and freeze any recipe you wish and you can use fresh or canned ingredients. The only effect will be the change in texture when thawed. It should be lightly cooked to kill bacteria first as freezing does not kill bacteria but cooking isn't required.

Yes you may freeze in canning jars but you need to leave extra head space for expansion and do not screw down the lid completely until after the contents freeze. Freezer bags are better - take up less space and no concerns with breakage.

Thank you Dave! You just gave me that site on another thread. I haven't had a chance to look it over but I did save it. I will check it out more.
