| Anyone have a recipe for Strawberry Salsa that could be canned to share? I saw some at a farm stand recently and wanted to try it (if it is safe) as my family LOVES strawberries. Thanks!! |

| The only ones I know are for fresh eating or fridge storage. Google pulls up many recipes for it. I have never heard of one that has been tested and approved for canning because it still has all the low acid ingredients. Of course you could always make and freeze it. Dave |

| Bringing this up again, any recipes safe for canning? Could I add higher acid ingredients to make it safe? |

| Still lots of recipes for it out there on Google but majority are for fresh eating or freezer. The few that include canning are untested so do-at-your-own-risk. And some are apparently doing it - even using recipes to do it that include minimal added acid. They show no regard for the changes in density and are apparently counting on the acidity of the strawberries to make it safe. Their choice, their risk, and a relatively high one IMO since salsa is risky to begin with. Then there is the effect of the canning on the strawberries. Assuming you use an approved salsa recipe to begin with and can it then all you have to do is add some frozen, thawed strawberries to it prior to serving. Easy and safe. Dave |
