I'd like to try my hand at pickled watermelon rinds. I have the Ball recipe, of course, but I'm wondering what your favorite versions include. I like the looks of this version with jalapenos: http://www.injennieskitchen.com/2010/08/pickled-jalapeno-watermelon-ri nd.html

I like the gingered ones from The Joy of Pickling. I didn't have whole allspice berries, so skipped it and they seem like they need a little more spice. I didn't process them, just stuck them in the fridge since only 2 pints. I may add cloves to the jar. Also made the sweet ones with brown sugar but they are too sweet.

I would skip the allspice or decrease it, anyway, they came out too strong. Otherwise, that was a real good recipe and I'm going to make it again this summer.
