| So while watching canning videos I found that people dry can rice, beans, crackers, and other dry goods in their ovens. My question is, can you do this with dehydrated veggies? Are these methods safe? Thanks, |

| As long as you don't allow any oxygen or water into the container, your dehydrated foods should be just fine. I make my own jerky, and when I make more than I can use in under a week or two, I take the rest and put it in a glass jar with a good sealing top ... I use a pump'n'seal to vacuum seal the jar till I want to open it up and use it. |

| Sorry but so-called "dry canning" (aka oven canning) is not approved nor considered safe. See previous discussions about it linked below. Dave PS: UTube is not generally considered a reputable source for canning information as it is full of very risky how-tos so use it with great care |

| I don't know if he's really talking about oven canning - just using the oven to heat the jars to seal dry/dehydrated foods. But the jars aren't meant to be subjected to dry heat, so if you have totally dry foods (peppers, banana chips, rice) then you can vacuum seal them using a Foodsaver and the Ball jars. |
