Why cook and can dried beans?

Can one not just store dried beans/peas in the pantry? Is there benefits to cooking and canning them over storing them dry?

Purely convenience for those who want a quick product that's better and cheaper than commercially canned beans.

However, you can achieve similar convenience by cooking dried beans in a pressure cooker or cooking a double batch and freezing the excess.

It's one of those whatever-works-for-you choices.
