No, you don't add water. Mine are sweet, good spices, crunchy. Just plain good.
Yes, you can add food coloring.

The other recipe has more water than vinegar. You always have to have at least 1/2 of the brine to be 5 % acidity to water ratio.
So, no, that is not a safe recipe.
