LOTS of long green peppers got soft - any ideas?

Hi All - I have several pounds of long green chili pappers that I was going to slice and pickle. I let them sit a do or so too long and they are no longer as firm as when I got them. Any thoughts on what to do with them now? Could I still pickle them? Would they be any good?
